Preparation

  1. Activate the Yeast: In a small bowl, combine 200 ml of the lukewarm milk, 6 tbsp sugar, and 40 g yeast. Let it sit for about 10 minutes until it becomes foamy.

  2. Prepare the Dough: In a large mixing bowl, whisk together the activated yeast mixture, 120 ml of oil, ½ cup sour milk, and 3 egg whites. Gradually add 13 cups + 12 tbsp flour and 3 tsp salt, mixing with a dough mixer or by hand until you achieve a soft, smooth, and non-sticky dough.

  3. Let the Dough Rise: Drizzle 20 ml of oil over the kneaded dough, ensuring it’s coated. Cover the bowl with plastic wrap or a lid and let it rest in a warm place for about 90 minutes, or until doubled in size.

  4. Prepare the Dough Balls: Once risen, punch down the dough to release air bubbles. Divide it into 7 equal pieces and shape each into a ball. Cover with a kitchen towel and let them rest for 30 minutes.

  5. Roll and Shape: On a floured surface, roll out one dough ball into a circular sheet about 2-3mm thick. Brush with melted butter or margarine. Cut the circle into 12 triangles.

    • Fill and Roll: Optionally, place a small amount of filling (such as fresh cheese/feta or fruit jam/Nutella) at the wider end of each triangle. Roll each triangle tightly from the wider end towards the pointed end, forming a crescent shape. Place on a parchment-lined baking tray.

  6. Second Rise: Cover the tray with a kitchen towel and let the Kiflički rise for about 30 minutes, or until puffy.

  7. Prepare for Baking: Preheat your oven to 350°F (180°C). Whisk together 2 egg yolks and 80 ml of milk. Brush the risen Kiflički with the egg yolk mixture and sprinkle with sesame seeds.

  8. Bake: Bake in the preheated oven for about 25 minutes, or until golden brown. Remove from the oven and immediately brush with melted butter or a little water to keep them soft.

  9. Serve and Store: Traditionally, Kiflički are served at festive gatherings like Slava with ham, cured meats, cheeses, olives, and salads such as Russian or French salad. They can also be enjoyed with fresh cheese, fermented milk, or as a sweet treat with Nutella or jam. 🥐🫒🧀🍓

  10. Freezing Instructions: To freeze, let the Kiflički cool until lukewarm. Freeze them, then, when ready to serve, simply take them out of the freezer and let them thaw at room temperature. Do not reheat; they will taste as fresh as when first made.
